Picanha ( pronounced Pee-kahn-yah) is a cut of beef that is popular in Brazil. The cut comes from the top of the rump cap muscle and has a thin layer of fat.
The Prime steak is taken from the centre Rump section. It`s good old fashioned Rump Steak, without the gristly bits.
The Bistro Rump is taken from the most tender part of the Rump and it's highly trimmed to produced a soft flavoursome steak.
